I can't say I've ever seen a gourmet cookware store in Bangkok, you might try a Central department store, Central Chitlom and other Central stores have a large selection of higher end housewares and cookware although I can't say whether they have Le Creuset or not. You might also check the houseware departments at Robinson's, Isetan or Zen or possibly somewhere in Thonglor, the yuppie area of Bangkok.
